Sausage Stuffed Butternut Squash with Spinach, Pecans, and Cranberries

  • 2 medium butternut squashes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 pound ground turkey sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 5 cups fresh spinach
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). 🌡️📄
    • Line a baking sheet with parchment paper.
  2. Prepare the Squash:
    • Cut the butternut squashes in half lengthwise and scoop out the seeds.
    • Brush the flesh with olive oil and season with salt and pepper.
    • Place the squash halves cut side down on the baking sheet.
    • Roast for 40-50 minutes, or until the flesh is tender. 🍂🔥
  3. Cook the Sausage:
    • While the squash is roasting, heat a large skillet over medium heat.
    • Add the ground turkey sausage and cook until browned, breaking it up into small pieces.
