White Beans and Sausage Bowl

  • 1 pound smoked turkey sausage, sliced
  • 2 cans white beans (such as cannellini or Great Northern beans), drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Sausage 🔪

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the sliced sausage and cook until browned, about 5-7 minutes.
  • Remove the sausage from the pot and set it aside.

2. Sauté the Aromatics 🌿

  • In the same pot, add the chopped onion and minced garlic.
  • Sauté until the onion becomes translucent, about 3-4 minutes.

3. Combine and Simmer 🍲

  • Return the sausage to the pot.
  • Add the white beans, chicken broth, dried thyme, and dried parsley.
  • Season with salt and pepper to taste.
  • Stir well to combine.

4. Cook and Thicken 🔥

  • Bring the mixture to a boil.
  • Reduce the heat and let it simmer for about 20-25 minutes, or until the flavors meld together and the broth slightly thickens.
