- 1 lb. ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup ketchup
- 1/4 cup milk
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 2 cups mashed potatoes, whipped until creamy
- Chopped chives for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the ground beef, breadcrumbs, egg, ketchup, milk, garlic powder, onion powder, salt, and pepper.
- Press the meat mixture into muffin tins, filling each cup to the top.
- Bake in the preheated oven for about 20-25 minutes, or until the meatloaf is cooked through.
- While the meatloafs bake, whip the mashed potatoes until they’re light and fluffy.
- Once the meatloafs are done, let them cool slightly and then remove them from the tins.
- Pipe the whipped potatoes on top of each meatloaf cupcake using a piping bag with a star tip.
- Garnish with chopped chives and serve warm.
