Zucchini Garlic Bites

  • Author: Lily
  • Total Time: 40 minutes
  • Yield: 20-24 bites, serving 4-6 people 1x

Ingredients

Scale
  • 2 medium zucchinis, grated – These provide the base and moisture for the bites.
  • 1 large egg – Acts as a binder, holding the mixture together.
  • 1/2 cup shredded mozzarella cheese – Adds a creamy texture and cheesy flavor.
  • 1/4 cup grated Parmesan cheese – Offers a tangy, salty depth of flavor.
  • 1/2 cup breadcrumbs (or panko for extra crunch) – Adds structure and ensures the bites are crispy.
  • 2 garlic cloves, minced – Infuses the bites with a rich, aromatic garlic flavor.
  • 1/4 tsp salt – Enhances the overall taste.
  • 1/4 tsp black pepper – Adds subtle heat.
  • 1/4 tsp onion powder – Complements the garlic and adds depth to the flavor profile.
  • 1/4 tsp Italian seasoning – Brings in a savory, herbaceous element to the bites.
  • Olive oil (for frying or optional for baking) – Ensures crispiness and prevents sticking.
  • Fresh herbs like basil or parsley for garnish (optional) – Provides a pop of freshness and color when serving.

Instructions

1. Prepare the Zucchini:

  • Grate the zucchinis using a box grater.
  • Place the grated zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible. This step is crucial to prevent the bites from becoming soggy.

2. Mix the Ingredients:

  • In a large bowl, combine the grated zucchini, egg, shredded mozzarella, Parmesan cheese, breadcrumbs, minced garlic, salt, pepper, onion powder, and Italian seasoning.
  • Stir until all ingredients are well combined and the mixture holds together.

3. Form the Bites:

  • Using your hands or a small scoop, form the mixture into small, bite-sized balls or patties, about 1 to 1.5 inches in diameter.
  • Press the mixture firmly to ensure it holds together and won’t fall apart during cooking.

4. Cook the Bites:

You have two options depending on your preference for frying or baking:

  • Option 1: Frying
    • Heat a few tablespoons of olive oil in a large skillet over medium heat.
    • Once the oil is hot, carefully add the zucchini bites to the skillet, cooking in batches if necessary.
    • Fry for 2-3 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels to absorb excess oil.
  • Option 2: Baking
    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper and place the zucchini bites on the sheet.
    • Lightly spray or brush them with olive oil for extra crispiness.
    • Bake for 20-25 minutes, flipping halfway through, until they are golden and crispy on both sides.

5. Serve the Zucchini Garlic Bites:

  • Serve the bites warm, garnished with fresh herbs like basil or parsley for an extra burst of color and flavor.
  • These bites are delicious on their own, but you can pair them with dipping sauces such as marinara, ranch, or garlic aioli for an added flavor boost.
